There are pizzas, and there is Pizza Napoletana — so precise, so protected, that UNESCO added the craft of the Neapolitan pizzaiuolo to its list of Intangible Cultural Heritage in 2017. What makes a pizza Napoletana?

The rules are famously strict, set by the Associazione Verace Pizza Napoletana. A true Neapolitan pizza uses only Tipo 00 flour, water, salt and yeast in the dough — no oil. It's topped with San Marzano tomatoes grown on the volcanic plains of Vesuvius, fresh mozzarella (fior di latte or buffalo), basil and a thread of olive oil. And it's baked in a wood-fired oven at 430–480°C for 60–90 seconds, which gives the puffy, leopard-spotted rim — the cornicione.

The dough (start a day ahead)

Dissolve the yeast in the water, then work in the flour and finally the salt. Knead 10–15 minutes until smooth and elastic, rest 20 minutes, then cold-ferment 24 hours in the fridge. This slow rise is where the flavour and digestibility come from. Divide into four 250 g balls and proof another 4–6 hours at room temperature before shaping.

  1. Hand-stretch each ball to about 28 cm, pushing air into the rim. Never a rolling pin — it crushes the cornicione.
  2. Spread the crushed tomato, add torn mozzarella, a few basil leaves and a drizzle of oil.
  3. Bake as hot as you can. Wood-fired: 60–90 seconds. At home: a pizza steel under a max-heat grill, 4–6 minutes, until the rim blisters.
