An asado is less a recipe than a ritual. In Argentina it is a whole afternoon — wood burned down to embers, meat cooked slowly, friends gathered around the parrilla. The secret isn't a sauce or a rub. It's patience, salt, and fire.

The Argentine way is to burn hardwood (or quebracho charcoal) down to glowing embers, then shovel those coals under the grill — never cook over open flame. You want steady, gentle heat: you should be able to hold your hand over the grill for about 5 seconds.

The cuts do the talking. Classics are tira de asado (crosscut short ribs), vacío (flank), plus chorizo and morcilla (blood sausage) to eat first while the beef cooks.

Method

  1. Build the fire. Burn hardwood or quebracho charcoal down to glowing embers. Spread a bed of coals under the grill for gentle, indirect heat.
  2. Salt generously. Salt the meat with coarse rock salt just before it goes on — no oil, no marinade. The salt is the seasoning.
  3. Sausages first. Grill the chorizo slowly until cooked through; serve as a choripán starter while the beef cooks.
  4. Low and slow. Cook the short ribs bone-side down for the first hour, then flip. Total 2–3 hours over gentle coals until tender and richly crusted.
  5. Rest & chimichurri. Rest the meat, slice against the grain, and serve with fresh chimichurri.
